'Stomp the Grapes' Smoothie

I created this smoothie especially to accompany my Meal Prep: Healthy, Italian-Inspired Dishes.  Over the summer, I froze some seedless, red grapes, which sometimes I snack on by themselves, but mixed with my smoothie favorites, this makes a delicious, antioxidant powerhouse of a smoothie, or smoothie bowl.
Ingredients:
1 cup frozen, seedless grapes
1/2 cup blueberries
3-4 slices frozen peach slices
1 1/2 cups unsweetened almond milk
5-6 almonds
1 scoop vanilla protein powder (optional)
  1. Mix all ingredients with a handblender...Enjoy!

Mango Papaya Liquado (Smoothie)

Although I usually make smoothies with yogurt, in Mexico they use only milk to make 'liquados' (smoothies).  Blending the rich flavors of South American fruits in season, gives this smoothie a special panache and compliments perfectly with my Meal Prep: Healthy Mexican-Inspired Dishes plan.
Ingredients:
2-3 oz. fresh mango
2-3 oz. fresh papaya
1 banana
1- 1 1/2 cups of fresh pineapple chunks
2 tbsp. Manuka honey
1 scoop vanilla protein powder (optional)
1.5 - 2 cups unsweetened almond milk
ice cubes
  1. Blend all ingredients together with hand blender... Enjoy!

Apple-Cinnamon Oatmeal Bake

<img src="Lisa-Machos.jpg" alt="Lisa Machos" <img src="That-Sexy-Dish.jpg" alt="That Sexy Dish"
In the efforts to eat healthy, it's easy to get to a point where the healthy staples, such as oatmeal, get pretty boring, and going off your healthy lifestyle becomes very tempting. Oatmeal bakes are a great way to add some variety without going off course with an unhealthy choice.  Here is my recipe for an oatmeal bake with apples and cinnamon:
Ingredients - Makes 6 servings:
2 cups old-fashioned oats
1/4 cup light brown sugar
2 tsp. cinnamon
1/2 cup no-fat plain Greek yogurt
1 1/2 cups unsweetened almond milk
1 tbsp. of melted coconut oil
2 egg whites
1 tsp. pure vanilla extract
1/2 tbsp. of truvia or preferred sugar/ sugar substitute
1 medium apple, cored and sliced
sugar-free or preferred maple syrup (optional topping)
  1. Preheat oven to 350 degrees F.  Coat a 1 1/2 quart baking dish with olive oil cooking spray.
  2. In a large mixing bowl, combine the following dry ingredients: oats, brown sugar, 1 1/2 tsp of the cinnamon.
  3. In a separate mixing bowl, whisk together the following wet ingredients: milk, yogurt, oil, egg whites and vanilla.
  4. Combine wet and dry ingredients together, and pour into prepared baking dish.
  5. Bake for 20-30 minutes, or until oatmeal bake begins to thicken.
  6.  Remove from the oven, place apple slices in rows (see picture).
  7. Sprinkle with remaining cinnamon and truvia/ sugar substitute and return to oven.
  8. Bake an additional 10 minutes, or until oatmeal is golden brown and apples soften.
  9. Drizzle a serving with optional, preferred syrup...Enjoy!

*This is so yummy that the generic name of 'Tropical Smoothie' just doesn't do it justice.  I would love some ideas from other people and whoever comes up with the best name will receive credit on That Sexy Dish! homepage and on my Instagram.

I will say that I have always been a huge fan of the 80's t.v. series, Magnum P.I.  If any idea entries include a nod to the show, I would love it!

*Update: My good friend Jen provided the winning name: The 'Island Hopper' Tropical Smoothie.  Thanks so much!

Healthy Peanut Butter Wrap with Apple

This is a healthy wrap I use for breakfast because it's a perfect balance of fruit, healthy fats, protein and fiber.  I don't personally eat a lot of fruit except in the mornings, but this can also be a well balanced lunch or afternoon snack that will boost your energy.  The trick is finding the low carb tortillas.  When I say low carb, what you want is high fiber.  The carb count is not all that different, but the high fiber counteracts the carbs you ingest.

Ingredients:
1 low carb tortilla
2 tbsp. natural peanut butter
1/2 apple, thinly sliced
1 tbsp. raisins

1. Spread peanut butter over on 1/2 side of the tortilla.
2. Cover the peanut butter side with the apple slices.
3. Sprinkle raisins on top.
4. Fold, and cut in half.

Healthy Peanut Butter Wrap with Banana

Ingredients:
1 low carb tortilla
2 tbsp. natural peanut butter
1 banana
1 tbsp. Manuka honey

Tip: If you are taking this as a to-go breakfast or snack, I recommend carrying honey in a separate container or baggie, until you are ready to eat.  Otherwise it will run all over the place after some time.

Lisa's Green Smoothie

<img src="Lisa-Machos.jpg" alt="Lisa Machos" <img src="That-Sexy-Dish.jpg" alt="That Sexy Dish"
"It's not easy being green..." so says Kermit the Frog, but it's much easier eating a green breakfast with my smoothie.  It's definitely not always easy to balance the taste of spinach in a smoothie drink that you expect to be sweet tasting.  However, my smoothie achieves this and more, by keeping fruit selections in the green family and including the sweet over-ripeness of a banana.  While pumpkin seeds can also be somewhat of an acquired taste, this is a great way to incorporate them into a healthy breakfast (or lunch) smoothie.

Prep Time - Approximately 5-10 minutes

Here is my favorite Breakfast Smoothie recipe which I have at least a few times a week.  I personally use a hand blender when making my smoothies, but a blender works just as well:

<img src="Lisa-Machos.jpg" alt="Lisa Machos" <img src="That-Sexy-Dish.jpg" alt="That Sexy Dish"
Ingredients
5-6 whole almonds
1 banana
1/2 apple
1 tbsp. ground flax seed
2 tbsp. of no fat, plain Greek yogurt
1 scoop vanilla whey protein powder (optional)
1-1 1/2 cups unsweetened almond milk
1-2 cubes of ice
Cinnamon
  1. Finely chop up the whole almonds and place in blender container.
  2. Chop up fruit (banana & 1/2 apple)
  3. Add scoop of whey protein (optional)
  4. Add tbsp. of flax seed
  5. Add yogurt
  6. Add milk, may vary based on size of ingredients, but should be enough to almost submerge ingredients.
  7. Add in ice cubes (may be a matter of preference if you have used frozen bananas)
  8. Sprinkle cinnamon to taste on top of smoothie and enjoy!
