Detox Lunch 2: Chicken, Tomato & Cucumber Salad

Once again, I aim for simplicity when it comes to my healthy lunches and salads. It saves time and the few ingredients keep the dish pure, but there is no skimping on taste and satisfaction.  This is an easy way to get fresh, raw veggies into your diet, to obtain or keep that sexy dish figure.  Perhaps you've heard the corny pick up line, "If you were a vegetable, you would be a cute-cumber..." Yeah...it's true.  

During busy weeks, I usually pick up a rotisserie chicken that I use the white breast meat for salads, like this one, or to couple with veggies. Otherwise I usually grill a few breasts of chicken every few days for quick protein packed meals.  The below is based on using rotisserie chicken already made that is available at most mainstream grocery stores.

Ingredients:
1 cucumber, peeled, chopped
1/2 tomato, chopped
2 tbsp. extra virgin olive oil
3 oz. rotisserie chicken breast, skin removed, cut into bite-sized pieces
garlic powder & black pepper to taste

Mix all veggies and chicken together, and toss with oil.  Add optional seasonings, and mix one more time...Enjoy!
