Over the Rainbow Cupcakes

I just love these cupcakes and there are a few different versions out there but this is mine that I used as part of my St. Patrick's Day Party spread.  It's very easy and I hope you enjoy making and eating them.  Caution: These will turn your tongue blue!
Ingredients:
1 box of lemon cake mix
Cake mix ingredients needed (eggs, water and *vegetable oil)
Blue icing or white/ vanilla icing and a few drops of blue food coloring
mini marshmallows
gold cake/ cupcake decorating beads 
Airheads Xtreme Rainbow Berry strip candy
  1. Prepare cake mix as cupcakes as directed on box. (If you have white/ vanilla icing and blue food coloring, mix together)
  2. Once cupcakes cool, ice the tops with blue icing.
  3. Sprinkle (by a finger pinching) the gold beads in a cluster on one side of the cupcakes. (You may need to gently press the beads into the icing to keep them from rolling off when cupcakes are transferred to a serving dish or to guests)
  4. Place 2-3 mini marshmallows in a cluster on the opposite side of the cupcakes from the gold bead cluster.
  5. Take a butter knife and make a vertical pre-slit on each side of the cupcakes in between the bead and marshmallow clusters.
    Steps for making Over the Rainbow Cupcakes
  6. Measure Airhead Xtreme Rainbow Berry candy strips to the size of 'rainbow' you want for your cupcake (I shortened the strips by about 2").
  7. Push ends of into the pre-slits inside cupcake...serve and enjoy!

*Even though cake mixes call for vegetable oil, I recommend using coconut oil.
