Freezing Bananas

It happens, you commit to eating healthy and life gets in the way.  Or you stuck to your commitment but maybe altered your menu or had to go out of town.  Either way, occasionally we don't get around to eating fruits as quickly as we would have liked to do. And these are the bananas we wake up to one morning:

Now it's commonly known that the thing to do with over-ripe bananas is to bake Banana Bread, but if you're trying to stick to a low-carb diet, that's not necessarily the best solution. So here's the healthy alternative: freeze them and use them in your smoothies. Over-ripe bananas are at their sweetest, but are also quite mushy, so here's the best way to freeze them:

  1. Lay wax paper down on a baking sheet.
  2. Peel the bananas and slice.
  3. Place the banana slices on the baking sheet and freeze overnight.
